My First Big Dish: Mimi Chicken

So… Welcome back to me! I took a short break from the blog to work and travel and promote the book but today I had the urge to blog! Here’s why:

At many of the events I go to I meet young women who tell me that they never, NEVER cook. And I get it. I never cooked either until about 6 years ago (Read all about it here).  I work (as a freelancer I like to joke I have 17 different jobs) and have a husband, a toddler and 2 dogs. So, trust me, some nights the fam just has to settle for eggs and pancakes.

But on Sundays I love to cook. And my very favorite dish to make when I have the time is Mimi Chicken (pg. 164 in JCBC). It’s not the easiest dish, it’s time-consuming and has a lot of different ingredients, but the good part is that they all go in one big pan. The dish is hard to describe but it’s similar to a Spanish chicken and when served over yellow rice is absolutely one of the most delicious things I’ve ever made. The chicken gets so tender it literally falls right off the bones. So here it is. After the jump I’m sharing the recipe in an effort to inspire others to give it a shot.
