Beer-can chicken is my go-to dish whenever one of the following happens:
- I am having people over for dinner last-minute.
- It’s raining so I can’t make my husband grill.
- I can’t think of anything else to make.
It’s so easy that is continually shocks me that people are impressed by it. The funniest part of the recipe is that it was originally told to me by an incredibly fancy friend of the family who happens to be an incredible cook. I asked her how she made the chicken and expected a lengthy gourmet explanation. I got “Andrea, put the chicken on top of a beer can and cook it in the oven.” For a long time we made it on the grill until a thunderstorm forced us inside and the chicken into the oven.
