Sunday Night Dinner: Beer-can Chicken

Beer-can chicken is my go-to dish whenever one of the following happens:

  1. I am having people over for dinner last-minute.
  2. It’s raining so I can’t make my husband grill.
  3. I can’t think of anything else to make.

It’s so easy that is continually shocks me that people are impressed by it. The funniest part of the recipe is that it was originally told to me by an incredibly fancy friend of the family who happens to be an incredible cook. I asked her how she made the chicken and expected a lengthy gourmet explanation. I got “Andrea, put the chicken on top of a beer can and cook it in the oven.”  For a long time we made it on the grill until a thunderstorm forced us inside and the chicken into the oven. Random Recipe #1

So….not really a Jewish thing, but I do happen to have an arsenal of great anytime recipes that I love to share. I cook dinner almost every night, so I’ve become pretty adept at picking and choosing and mixing recipes from all over to pull together some good original stuff. This one is in honor of Earth Day (I know, it was last week but I’ve been busy!) and it’s a great, simple, and delicious one. Hope you like it:

“Green” Burger

1 package Jenny-O ground extra-lean turkey breast
1 small zucchini
1 small cucumber
¼ cup breadcrumbs
¼ cup of milk
½ tsp. garlic powder
½ tsp. pepper
½ tsp. Paprika
1 small ripe avocado
lettuce
1 bottle vinaigrette salad dressing (I like Marie’s Blue Cheese Vinaigrette)
1-package whole-wheat hamburger buns
1 tsp. Olive oil
